The deck says three hundred and fifty tonnes a year from a two-thousand square metre facility. It does not say whether that is grown area or floor area, how many of the fifty-two weeks the model assumes, what happens to the figure in the four weeks around a crop changeover, or how many kilowatt hours went into each kilogram. An investor who has read four of these decks will ask all four questions in the first meeting.

The production and unit economics statement is where a vertical farming business is credible or not, and its failure is a yield figure quoted without the basis that produced it. This sector has spent its credibility on numbers that turned out to be capacity rather than output. We work through these so yield is stated per unit of growing area with the growing area defined and separated from the building footprint, since the ratio between them varies enormously and is the easiest place to double a number; so the annualisation is shown with the number of production weeks assumed and what happens in the others, because a cycle time multiplied by fifty-two is a theoretical maximum and not a forecast; so the energy figure is given per kilogram of saleable product rather than per square metre, given that this is the number the sector is judged on and the one most often omitted; so saleable yield is distinguished from harvested yield with the grade-out assumption stated; so labour is expressed as hours per kilogram at the stated scale rather than as headcount, as this is what does not scale the way people expect; so the figures are labelled as demonstrated, modelled or targeted, with demonstrated figures carrying the period they were achieved over; and so the crop mix is stated, since the economics of one leafy crop do not transfer to another. Documents written this way get a second meeting.
